What is Bibingka?
Bibingka is a Philippine rice cake that is usually eaten during Christmas season. This is usually being sold in wooden kiosk outside church. Bibingka is usually paired with Puto Bumbong, glutinous rice cooked in bamboo tubes and colored with purple coloring. During Simbang Gabi in the Philippines, these two delicacies sell like pancakes as early as 4 o’clock in the morning.
Today you don’t need to wait for the Christmas season to taste them because there is already ANTONIO’S Coffee + Bibingka, this is actually the first store that I know that made Bibingka available to people who shop every day at malls.
